Our Trip Pt 1 ( heavy picture use)

So I have been meaning to write this post since November 6th.  Unfortunately asthma attacks and colds happened when we got back from Florida, so I had to get my kids and myself better before I could write this post.

We left from Indiana October 27th around 3 pm.  Luckily on the way down traffic was a breeze!  It took us 15 hours with loads of bathroom breaks and food stops.  We arrived at Disney World around 6 am.  We checked in, but our room wasn't ready until about 830 am.





This is about halfway through our trip!  Disney DVDs helped out a lot!  They were so into the Little Mermaid.  My husband was the only one in the back not "into" the movie...lol...
He slept most of the trip, but he fussed a lot even during his sleep.

We were beat from the drive, but once we got to our room and got cleaned up we had a burst of energy and were ready to head to Disney Springs!  Off we went....

He fell asleep before we got there...

 We had lunch at the Earl of Grey and it was delicious!  I had the Holiday Turkey sandwich and loved it!  My husband and his brother had the Chipotle Chicken sandwich.  It was great as well.  My mom and 2 oldest had the roast beef and cheddar.  It was tasty too.  My youngest got an order of mac n cheese and ate it up too.  Let's just say we ate here the next day too because it was so delicious!

After lunch we bought most of our souvenirs and explored.  I suggest doing this with your kids because everything each park had they had here at The World Of Disney!  Each of  our kids got a $100 gift card (The oldest 2 earned theirs by doing house work when asked and my youngest earned his by picking up toys and doing small chores)  We only bought them one surprise each and it was less than $20.  We had dinner reservations at 7:45 at Boatwright's Dining Hall at POR.  I changed the time to 5 because we were all tired by 4.  We took the boat over to the resort.  It was a quiet relaxing ride.  It was so relaxing My oldest fell asleep.


 My husband and oldest fell asleep while waiting for the restaurant to open. We got there about an hour early so they had a decent nap.  Even with that nap he had a meltdown during dinner.  He had a migraine and needed meds asap, thankfully the gift shop had just what he needed and hubby took him outside for some fresh air and came back 15 minutes later with a happier child.  He then ordered his dinner.  We all enjoyed ours meals.  I know I will be going back and getting the creamy shrimp and grits again.




 Once we got back to our hotel the kids saw the pool and wanted to swim.  Why not....My legs were not happy from the drive down so I took all 3 to the pool and we swam for an hour.  By the time we got out and went upstairs the swelling in my ankles was already better...The drive down really messed my legs and feet up, every night my feet and ankles looked like the did when I was 9 months pregnant! When we flew down I had no issues but sitting for 15 hours is not for me.  Next time I am flying!





They loved the pool!  They could have just one day in the parks and stayed at the pool the rest of the trip and been happy!  Kids are so easy to please sometimes.  











Time for bed!  We all went to bed around 9!  That is early for all of us!

Creamy Cod Soup with Butternut Squash and Thyme

Tonight I decided to give a recipe I found a while back...I don't cook seafood much so I was worried I would mess it up or I wouldn't like it. Let me tell you this was so delicious! I was sweet from the squash and wasn't too fishy either.


Creamy Cod and Butternut Squash Soup
serves 4    Prep 20 MIN Cook 35 MIN


1 package thick cut bacon, chopped
1 onion, chopped
3 ribs celery, finely chopped
2 tbsp. fresh thyme
1 small butternut squash-peeled, seeded, and diced
1 1/2 tbsp flour
3 1/2 C veggie stock
1/2 C clam Juice
1 lb. skinless cod fillets, cut into large pieces
1 C heavy cream
1 crusty loaf of bread for dipping
A pinch of cayenne
hot sauce if desired 
  1. In a large pot cook the bacon until crispy.  Add the onion, celery, and fresh thyme and cook, stirring frequently, until the veggies are tender.  Stir in the squash and flour and cook, stirring until the flour starts to brown.  Stir in the stock and clam juice and bring to a boil.  Reduce the heat to med-low and simmer until the squash is tender.  Season with salt and pepper.
  2. Add the cod, cover and simmer until the fish flakes apart easily with a fork, about 5 min.  Stir in the cream and cayenne.  
  3. Toast the bread in the oven.
  4. Serve with the tasty bread and ENJOY!
